Pantry Staples
- 1/4 Onion, thinly sliced
- 1 Tbsp minced garlic (or 2-3 cloves thinly sliced garlic)
- Assorted mushrooms (e.g., button, king oyster, shiitake), sliced to your preference
- 3 Tbsp Olive Oil
- 100g Linguine pasta
- 3 Dried chili flakes (adjust to your spice preference, can be omitted)
- 1 Tbsp Butter (approx. 20g)
Cream Sauce Ingredients
- 200ml Milk
- 125g Mascarpone cheese (or 200ml Heavy Cream as a substitute)
- Pinch of Black Pepper, freshly ground
- Salt, to taste
- Pinch of Parsley flakes, for garnish
- 1/2 Chicken stock cube or 1 Tbsp Chicken stock (enhances umami, optional)
- A drizzle of Truffle Oil, for finishing
- 200ml Milk
- 125g Mascarpone cheese (or 200ml Heavy Cream as a substitute)

Cooking Instructions
Step 1
Fill a large pot with water for boiling the pasta. Add 1 tablespoon of coarse salt. This seasoned water is crucial for flavoring the pasta from the inside out.
Step 2
Prepare 100g of pasta. Linguine is used here, but feel free to use fettuccine, spaghetti, or your favorite pasta shape.
Step 3
Once the water comes to a rolling boil, carefully add the pasta. Stir gently at first to prevent the strands from sticking together.

Cook the pasta according to package directions or until it reaches your desired al dente texture. Reserve about 1/2 cup of the starchy pasta water before draining; it’s perfect for adjusting the sauce consistency later.

In a wide pan, heat 3 tablespoons of olive oil over medium-low heat. Add the dried chili flakes and minced garlic (or sliced garlic). Sauté until fragrant, being careful not to burn the garlic. This gentle sautéing releases a wonderful aroma. (Omit chili flakes if you prefer no heat).

Add the drained pasta to the pan along with about 3 tablespoons of the reserved pasta water. Stir well to combine; the starchy water will help emulsify the sauce and coat the pasta beautifully. Season with salt to taste.

Stir in 125g of mascarpone cheese. Continue stirring until the cheese is fully melted and the sauce is smooth and creamy. (If you don’t have mascarpone, 200ml of heavy cream works as a great substitute).

Taste the sauce and adjust the seasoning. If it needs a flavor boost, add 1/2 chicken stock cube or 1 tablespoon of chicken stock for extra umami. (This step is optional).
