Cooking Instructions
Step 1
First, wash the eggplants thoroughly and pat them dry. Cut them into bite-sized pieces, such as 1cm thick half-moons or lengthwise strips. Slice the red onion into similar-sized strips. For the green peppers, remove the stems and seeds, then slice them diagonally to match the length of the eggplant. Chop the green onion finely or into long pieces.
Step 2
Heat a pan over medium heat. Add 1 tablespoon of avocado oil and 2 tablespoons of perilla oil. Once the oil is hot, add the sliced eggplants and red onions. Stir-fry them until the vegetables become slightly translucent and tender. This step helps the eggplant absorb the oil, making it soft and flavorful.
Step 3
When the eggplants and onions are partially cooked and have softened slightly, add 2 tablespoons of soy sauce for seasoning, 1 tablespoon of oyster sauce, and 1 tablespoon of minced garlic. Stir well to coat all the ingredients and continue to cook for about 1-2 minutes to adjust the seasoning.

Now, add the sliced green peppers to the pan. It’s best to add green peppers towards the end of cooking to maintain their crisp texture, as they can become soggy if overcooked.

After adding the green peppers, gently toss everything together to ensure the ingredients are well combined and evenly coated with the sauce.

Finally, add the chopped green onion. Stir briefly one more time to distribute the fragrant aroma of the green onion throughout the dish.

Once all the ingredients are well mixed and deliciously stir-fried, turn off the heat. You can sprinkle some toasted sesame seeds on top for an extra touch, if desired.
