Ingredients
  • Pork belly 900g
  • Cola 900ml
  • Soy sauce 300ml
  • Radish 1/4 piece
  • Green onion 1 stalk
  • Onion 1/2 piece
  • Garlic 7 cloves
  • Ginger 1 piece (thumb-sized)
  • Whole peppercorns 1/2 tsp

Cooking Instructions

Step 1

First, prepare 900g of pork belly. Soak it in cold running water for about 20 minutes to remove any excess blood. This step is crucial for a clean taste without gamey odors. We’ll be cooking it directly in the pressure cooker without pre-boiling.

Step 2

Now, slice the radish (1/4 piece) into thick rounds and lay them at the bottom of the pressure cooker. The radish acts as a natural steamer and helps prevent the meat from sticking, while also imparting a subtle sweetness and aroma. Place the drained pork belly on top of the radish.

Step 3

Once the pork belly is in, pour in 900ml of cola and 300ml of soy sauce. Using cola in a similar volume to the meat helps to tenderize it and infuses a mild sweetness. The soy sauce adds depth of flavor; a ratio of about 1/3 soy sauce to cola is generally good for 900g of meat.

Step 4

Time to add the aromatics! Toss in a whole stalk of green onion (1 stalk), half an onion cut into large chunks, 7 cloves of garlic, a thumb-sized piece of ginger, and 1/2 teaspoon of whole peppercorns. These ingredients will work together to eliminate any porky smell and enhance the overall fragrance.

Step 5

Securely close the lid of the pressure cooker and set it over high heat. Once the pressure cooker starts to whistle (the weight valve begins to rock), reduce the heat to medium-low and cook for 10 minutes. After 10 minutes, turn off the heat and let the pressure release naturally until the safety valve has completely lowered. (I maintained high heat throughout the cooking process.)

Step 6

After the whistle blows and it cooks for 10 minutes, then naturally depressurizes, open the lid to find perfectly cooked, tender, and juicy pork belly. Cooking times can vary slightly depending on your stove’s heat and the exact amount of meat, so feel free to adjust the time as needed to achieve your desired doneness.

Step 7

Allow the boiled pork belly to cool slightly before slicing. If you cut it while it’s piping hot, it might fall apart. Let it cool down just enough so you can handle it comfortably, then slice it into your preferred thickness for beautiful, intact pieces.

Step 8
