Main Ingredients
  • Chamnamul (Korean Pimpinella brachycarpa) – about the size of a 100-won coin, 1 handful

Seasoning
  • Soy sauce, 1 Tbsp
  • Plum extract (or syrup) 1/2 Tbsp
  • Vinegar 1/2 Tbsp
  • Red pepper flakes (Gochugaru) 1/2 tsp
  • Sesame seeds, to taste
  • Perilla oil (Deulgireum) 1/2 Tbsp

Cooking Instructions

Step 1

Start by thoroughly rinsing the fresh Chamnamul. Gently wash it under running water multiple times to remove any dirt or impurities. Afterward, let it drain well in a colander until completely dry. This step is crucial to prevent the salad from becoming watery.

Step 2

Place the washed and drained Chamnamul into a mixing bowl. Cut it into bite-sized pieces, about 3-4 cm in length. You can also gently tear the leaves by hand. Add all the seasoning ingredients (soy sauce, plum extract, vinegar, red pepper flakes, and perilla oil) to the bowl. Gently toss the Chamnamul with the seasonings, being careful not to mash the delicate leaves. Mix until everything is evenly coated.

Step 3

Transfer the well-seasoned Chamnamul salad to a serving plate. Sprinkle sesame seeds generously over the top for an added nutty flavor and an appealing presentation.

Step 4

Prepare a bowl of hot, steamed rice. Top the rice with a perfectly fried sunny-side-up egg. Drizzle a little sesame oil over the egg and rice for extra aroma and richness. This creates a wonderful base for a delicious mixed rice bowl.

Step 5

Now, add the prepared Chamnamul salad and your desired amount of gochujang (Korean chili paste) to the rice. Mix everything together thoroughly and enjoy! The sweet, tangy, and fragrant Chamnamul will awaken your appetite and make for a satisfying and delightful meal.
