Crown Daisy Preparation
- 1 serving of blanched crown daisies (approx. 200g)
Seasoning and Dressing
- 1 tsp salt (for blanching)
- 2 stalks of green onion (finely chopped)
- 1 Tbsp minced garlic
- 1.5 Tbsp fish sauce (can substitute with soy sauce or tuna extract)
- 1 Tbsp sesame seeds
- 1 Tbsp perilla oil (Korean sesame oil)
- 1 chili pepper (seeds removed and finely chopped)
- 1 tsp salt (for blanching)
- 2 stalks of green onion (finely chopped)
- 1 Tbsp minced garlic
- 1.5 Tbsp fish sauce (can substitute with soy sauce or tuna extract)
- 1 Tbsp sesame seeds
- 1 Tbsp perilla oil (Korean sesame oil)
- 1 chili pepper (seeds removed and finely chopped)
Cooking Instructions
Step 1
The crown daisies we’re using today were harvested directly from the garden and are exceptionally fresh. Select fresh, aromatic crown daisies and prepare them carefully.
Step 2
Fill a pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add 1 teaspoon of salt. Adding salt helps to maintain the vibrant color of the crown daisies and aids in removing impurities.
Step 3
When adding the crown daisies to the boiling water, place the stem ends in first. This ensures even blanching. Submerge the entire bunch in the water and blanch for just about 10 seconds, flipping them once.
Step 4
After flipping the crown daisies, as soon as the water starts boiling again, turn off the heat immediately and remove the crown daisies. Blanching for too long can make them mushy and lose their aroma, so be careful. A mere 10 seconds is the key!
Step 5
Immediately transfer the blanched crown daisies to pre-prepared cold water to cool them down. Rinse them 2-3 times in the cold water to remove any raw smell. For an even cleaner taste, rinse them one last time in purified cold water. Gently squeeze out the excess water. Avoid squeezing too hard, as this can crush the delicate leaves; a gentle press is recommended.
Step 6
Gently loosen the squeezed crown daisies with your hands. If the stems are too long and awkward to eat, cut them into 2-3 bite-sized pieces with scissors.
Step 7
Place the prepared crown daisies in a bowl. Add the minced garlic, finely chopped green onions, deseeded and chopped chili pepper, and fish sauce. Mix everything together gently with your hands for the first round of seasoning. Taste and add a little more fish sauce or salt if needed.
Step 8
To the first seasoned crown daisy salad, add the nutty perilla oil and a generous amount of sesame seeds. Gently mix once more for the final touch. Once all the seasonings are evenly coated, your delicious blanched crown daisy salad is complete!
