How to Make Abalone Seaweed Soup
Abalone seaweed soup, made with fresh abalone, boasts a rich flavor and a satisfying chewy texture. Learn how to properly prepare abalone and the secrets to making this delicious soup that will surely impress!

Cooking Instructions
Step 1
While you prepare the abalone, soak the dried seaweed in cold water for about 15-20 minutes until softened. Once rehydrated, rinse the seaweed thoroughly under running water, gently squeezing out excess water. Cut it into bite-sized pieces.
Step 2
Now, let’s clean the fresh abalones. Use a soft brush or a clean scrubber to gently scrub the surface of the abalone shell and the meat to remove any dirt or debris.
Step 3
To detach the abalone from its shell, insert the tip of a spoon under the shell’s edge, close to the meat. Push the spoon along the inside of the shell towards the bottom to gently release the abalone.
Step 4
Next, remove the abalone’s mouth. Make a small lengthwise cut with the tip of a knife near the abalone’s mouth. Then, grasp the mouth part with your fingers and pull it away cleanly.
Step 5
Separate the abalone’s innards from the meat. Carefully use a knife to detach the green innards from the abalone meat. (The innards add a wonderful depth of flavor to the soup, so we’ll cook them together!)
Step 6
Slice the abalone meat thinly. Hold your knife at approximately a 45-degree angle and slice the abalone meat thinly. This technique will ensure a tender and chewy texture when cooked.
Step 7
Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the squeezed seaweed and the chopped abalone innards. Season with 1 tablespoon of fish sauce and 1/2 teaspoon of salt. Stir everything together.
Step 8
Sauté the mixture for about 2-3 minutes, stirring occasionally, until fragrant. This step helps to bring out the rich flavors of the seaweed and abalone innards.
Step 9
Add the thinly sliced abalone meat to the pot with the sautéed seaweed and innards.
Step 10
Cook for about 1 minute more, just until the abalone meat changes color. Be careful not to overcook, as the abalone can become tough.
Step 11
Pour in 2 liters of water (or use anchovy-kelp broth for an even richer flavor). Carefully add the water to the pot.
Step 12
Bring the soup to a boil, then reduce the heat to medium-low and simmer for 10-15 minutes, allowing the flavors to meld. Season with additional salt or fish sauce to your taste. Your nutritious abalone seaweed soup is ready to be enjoyed with a warm bowl of rice!
