Introducing a simple recipe for a refreshing Chilled Acorn Jelly Bowl. It’s a dish that’s both easy to enjoy and quick to prepare, making it a perfect, light meal for busy days. This special dish was made at the request of my health-conscious daughter. As the weather warms up, we naturally crave cool foods. Why not beat the heat with a bowl of this invigorating Acorn Jelly Bowl?
Main Ingredients- Acorn jelly (Dotori-muk) 300g
- Store-bought cold noodle broth (Naengmyeon-yuksu) 200ml x 2
- Lettuce 2 leaves
- Baby cabbage 2 leaves
- Aged kimchi, a little
- Sesame seeds, a pinch
Cooking Instructions
Step 1
First, prepare 300g of acorn jelly. Using store-bought acorn jelly makes the cooking process even more convenient.
Step 2
Prepare two 200ml portions of chilled store-bought cold noodle broth. Using broth that’s slightly slushy with ice will make it even more refreshing.
Step 3
To preserve the chewy texture unique to acorn jelly, use a muk-cutter or a knife to slice it into bite-sized pieces, about 1cm thick. Be careful not to slice it too thinly, as it might break apart.
Step 4
Add fresh vegetables and kimchi to enhance the flavor profile. Finely julienne 2 lettuce leaves, 2 baby cabbage leaves, and 2 pieces of well-fermented kimchi after washing them thoroughly. Lightly squeeze out excess juice from the kimchi before using.
Step 5
Arrange the prepared acorn jelly attractively at the bottom of a wide bowl. This is a crucial step to lay the foundation for your jelly bowl.
Step 6
Nicely arrange the julienned lettuce, baby cabbage, and kimchi on top of the acorn jelly. Finally, sprinkle a pinch of sesame seeds for a nutty aroma to complete the dish.
Step 7
Pour the two 200ml portions of chilled cold noodle broth over the prepared ingredients. Ensure the broth is poured evenly to cover all the ingredients.
