While you prepare the abalone, soak the dried seaweed in cold water for about 15-20 minutes until softened. Once rehydrated, rinse the seaweed thoroughly under running water, gently squeezing out excess water. Cut it into bite-sized pieces.

Now, let’s clean the fresh abalones. Use a soft brush or a clean scrubber to gently scrub the surface of the abalone shell and the meat to remove any dirt or debris.

To detach the abalone from its shell, insert the tip of a spoon under the shell’s edge, close to the meat. Push the spoon along the inside of the shell towards the bottom to gently release the abalone.

Next, remove the abalone’s mouth. Make a small lengthwise cut with the tip of a knife near the abalone’s mouth. Then, grasp the mouth part with your fingers and pull it away cleanly.

Separate the abalone’s innards from the meat. Carefully use a knife to detach the green innards from the abalone meat. (The innards add a wonderful depth of flavor to the soup, so we’ll cook them together!)

Slice the abalone meat thinly. Hold your knife at approximately a 45-degree angle and slice the abalone meat thinly. This technique will ensure a tender and chewy texture when cooked.

Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the squeezed seaweed and the chopped abalone innards. Season with 1 tablespoon of fish sauce and 1/2 teaspoon of salt. Stir everything together.

Sauté the mixture for about 2-3 minutes, stirring occasionally, until fragrant. This step helps to bring out the rich flavors of the seaweed and abalone innards.

Add the thinly sliced abalone meat to the pot with the sautéed seaweed and innards.

Cook for about 1 minute more, just until the abalone meat changes color. Be careful not to overcook, as the abalone can become tough.
