  • 2 ripe, firm tomatoes
  • 150g firm tofu
  • 1 bowl warm brown rice
  • 3 stalks scallions

Seasoning & Flavor

  • 1 Tbsp fine salt (for seasoning tofu)
  • 1 Tbsp sesame oil
  • 1/2 tsp minced fresh ginger
  • 1/2 tsp minced garlic

Cooking Instructions

First, cut the tofu into approximately 1.5cm cubes. Lightly pat the tofu dry with paper towels. Sprinkle with 1 tablespoon of salt for seasoning; this helps firm up the tofu and enhances its flavor. Wash the tomatoes, remove the stems, and chop them into bite-sized pieces, similar in size to the tofu.

Heat 1 tablespoon of sesame oil in a pan over medium heat. Add the minced garlic and ginger and sauté until fragrant, about 30 seconds. Then, add the cubed tofu to the pan. Increase the heat to medium-high and stir-fry the tofu until it turns golden brown and slightly crispy on the sides. This step adds a wonderful texture and nutty flavor to the tofu.
