  • 2 Tbsp vinegar

First, separate the grape seeds from the pulp. Place the grapes in a bowl and rinse them lightly under running water about twice. Then, add 1 tablespoon of baking soda and 2 tablespoons of vinegar to the grapes and gently rub to wash them thoroughly. This method effectively removes pesticides and impurities.

Carefully separate the grape pulp and skins of the washed grapes. The pulp will be used for juicing, while the skins will add wonderful flavor to the jam.

Place only the grape pulp into a pot. Cook over medium-low heat until the pulp breaks down and becomes like water. Stir occasionally to prevent sticking.

Once the grape pulp has cooked down and released its juice, strain the juice through a fine-mesh sieve or cheesecloth set over a bowl. We are only using the juice extracted from the pulp at this stage.

Transfer the reserved grape skins to a blender. Add just a tablespoon or two of water and blend until very smooth. A finely pureed skin will result in a smoother jam texture.

Now, combine the finely blended grape skins with the strained grape juice (pulp) in the pot. Cook over medium-low heat, stirring continuously with a wooden spoon. Be careful not to scorch the jam as you simmer it until it reaches your desired consistency.

When you lift the spoon, the jam should flow slowly, and the surface should show subtle ripples. This indicates the jam is ready. Immediately transfer the hot jam into pre-sterilized, clean jars. Inverting the jars after filling helps create a vacuum seal, extending shelf life.
