  • 40g water (about 3 tablespoons)

First, prepare your tangerines by peeling them completely. Gently remove any white pith attached to the fruit, as too much pith can make the tanghulu slightly bitter.

Insert a wooden skewer or chopstick firmly into each peeled tangerine. Push it in deep enough so that the tangerine is secure and won’t easily fall off.

In a microwave-safe mug or heatproof bowl, combine 80g of sugar and 40g of water. The ideal ratio for the syrup is 2 parts sugar to 1 part water.

You’re looking for the syrup to boil vigorously and turn a light golden-brown color. I microwaved mine for a total of 7 times, but this can vary depending on your microwave’s power.
