  • 1 medium Zucchini (approx. 200g)
  • 1/2 Pink Sausage (approx. 100g)
  • 2 Eggs
  • A small amount of Green Onion (approx. 20g)

Cooking Instructions

First, wash the zucchini thoroughly and trim off both ends. Then, slice it into rounds approximately 0.5cm thick. Slicing them slightly thicker will give a better bite. Make a circular cut in the center of each zucchini slice, creating a space for the sausage. Cut the pink sausage to match the size of the circular openings in the zucchini.

In a separate bowl, crack the 2 eggs and whisk them well to create an egg wash. Evenly coat the top side of the prepared zucchini slices with the egg wash. Gently shake the zucchini slices while coating to ensure the egg wash adheres properly. Carefully insert the prepared pink sausage into the center cut-out of each zucchini slice.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Once the oil is sufficiently hot, carefully place the zucchini and sausage assemblies into the pan. Be mindful of the heat; if the pan is too hot, they can burn easily. Adjust the heat as needed.

Once one side is golden brown and cooked, flip the pancakes to cook the other side until it is also golden brown. The pink sausage will get slightly charred and cook beautifully. Continue cooking until the egg wash is fully set and the zucchini is tender. For an extra touch of flavor, sprinkle finely chopped green onions over the top during the last moment of cooking.
