Ingredients

  • 2 medium zucchinis
  • 1/2 tsp salt
  • 90g cheese (e.g., cheddar, mozzarella)
  • 1 large egg
  • 1/2 tsp taco seasoning
  • 1 Tbsp coconut flour
  • Olive oil, for brushing

Cooking Instructions

Step 1

Wash the zucchinis thoroughly. Keep the stem end intact and trim just the opposite end. Holding the stem while grating will make it easier and safer to shred the zucchini.

Using a mandoline slicer, grater, or a knife, finely shred the zucchini. Aim for uniform, thin strands.

Add 1/2 teaspoon of salt to the shredded zucchini and mix well. Place the mixture in a sieve over a bowl and let it sit for 5 minutes. You’ll see moisture release from the zucchini.

After 5 minutes, grab handfuls of the shredded zucchini and squeeze firmly to remove as much excess water as possible. This step is crucial for a good texture.

To the squeezed zucchini, add the shredded cheddar and mozzarella cheese.

Add the egg, coconut flour, and taco seasoning to the zucchini and cheese mixture. Mix everything together until it forms a cohesive dough.

This is what the dough looks like. You might wonder if it will bake well without flour, but don’t worry! The cheese and egg will bind it beautifully.

Line a baking sheet or the air fryer basket with parchment paper and brush it lightly with olive oil. Spread the dough very thinly and evenly over the parchment paper. It should be much thinner than a traditional pancake or fritter. Spreading it thinly ensures it cooks well, becomes crispy, and doesn’t fall apart.

Carefully transfer the parchment paper with the spread dough onto a baking sheet for the oven, or directly into the air fryer basket, or a preheated frying pan. I used an air fryer for this recipe.

Brush the top of the dough with a little more olive oil. This helps it get golden and crispy. For the air fryer: bake at 180°C (356°F) for 15 minutes, then flip and bake for another 10 minutes at 180°C (356°F). For the oven, set a similar temperature and adjust the time as needed until golden brown. If using a frying pan, cook over medium-low heat, flipping occasionally until golden on both sides.
