Key Ingredients- 1/2 medium zucchini (adjust to size)
- 3 strips bacon (adjust to preference)
- 1/2 cup mozzarella cheese (generous amount is delicious!)
- 4-5 pinches salt (for dehydrating zucchini)
- A pinch of black pepper (for flavor)
Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Cut it in half lengthwise. Then, make evenly spaced cuts along the flesh, leaving about 1cm uncut at the top, creating a fan-like appearance. Avoid cutting too deep to maintain its shape.
Step 2
Sprinkle 3-4 pinches of salt evenly over the cut zucchini and let it sit for 10 minutes. This process draws out excess moisture, making the zucchini firmer and preventing it from becoming mushy during cooking. After salting, gently squeeze out any excess water with paper towels.
Step 3
Cut the bacon strips into thirds or fourths lengthwise. Insert these bacon pieces into the slits of the zucchini. As the bacon cooks, it will impart a wonderful flavor, creating a perfect pairing with the zucchini. Next, lightly sprinkle 1 tablespoon of cornstarch over the entire zucchini. This will help achieve a crispier exterior and ensure the egg coating adheres well.
Step 4
Now, preheat a pan and lightly grease it with oil. While the pan is heating, whisk one egg in a bowl to create an egg wash. Dip about half of the zucchini into the egg wash, coating the cut surfaces. Avoid excessive coating, as this can make it too much like fried food.
Step 5
Place the egg-coated zucchini in the preheated pan over medium-low heat. Cook until both sides are golden brown. It’s important to cook slowly until the bacon is sufficiently rendered and the zucchini surface is lightly browned. Be mindful of the heat to prevent burning.
Step 6
Once both sides are nicely browned, generously top the zucchini with 1/2 cup of mozzarella cheese. Cover the pan with a lid and continue to cook over low heat until the cheese is melted and gooey. Once the cheese is perfectly melted, your delicious Zucchini Cheese Bake is ready! Enjoy it while it’s warm.
