Key Ingredients

  • 3 Cucumbers
  • 1 Tbsp Coarse Salt (for pickling)
  • 2 Tbsp Sugar
  • 1 Tbsp Wasabi paste or powder (adjust to taste)

Cooking Instructions

Step 1

Prepare 3 fresh cucumbers.

Step 1

Step 2

Gently scrape off the bumpy texture on the cucumber’s surface with the back of a knife to clean it. (Be careful not to scrape too hard.)

Step 2

Step 3

Cut the cucumbers in half lengthwise. Then, use a spoon or a small knife to thoroughly scoop out the seeds. Removing the seeds helps maintain a crisp texture and prevents them from becoming mushy.

Step 3

Step 4

Slice the deseeded cucumbers into bite-sized pieces. Cutting them into triangles, as shown in the picture, allows them to absorb the seasoning well and makes for an attractive presentation.

Step 4

Step 5

Place all the sliced cucumbers into a prepared bowl.

Step 5

Step 6

Now it’s time for seasoning. Add 1 tablespoon of coarse salt, 2 tablespoons of sugar, and 1 tablespoon of wasabi to the bowl. You can use either tube wasabi or wasabi powder. If you enjoy a spicier kick, feel free to add a little more. Adjust the amount of wasabi according to your personal preference.

Step 6

Step 7

Put on disposable gloves and gently mix the cucumbers with the seasonings until well combined. After tossing, cover the bowl with plastic wrap and let it chill in the refrigerator for at least 1 hour to allow the flavors to meld. Refrigerating will further enhance the crispness and deepen the taste.

Step 7

Step 8

Once chilled, your delicious Wasabi Cucumber Pickle is ready! The delightful crunch of the cucumber combined with the invigorating kick of wasabi creates a wonderfully addictive flavor. Enjoying this after a rich or greasy meal will leave your mouth feeling remarkably refreshed!
