Zesty Stir-Fried Anchovies with Korean Chili Peppers

We stir-fried Korean chili peppers and anchovies together, then used lemon syrup to eliminate any fishiness from the anchovies, making it even more delicious.
Main Ingredients- 200g Korean chili peppers (Ggwari-gochu)
- 60g Dried anchovies (for soup/stir-fry)
- 1 Red chili pepper (optional, for color)
- 3 cloves Garlic, thinly sliced
- 1 Tbsp Cooking oil
Seasoning- 2 Tbsp Soy sauce
- 3 Tbsp Mirin (rice wine)
- 2 Tbsp Rice syrup or corn syrup
- 1 Tbsp Lemon syrup (or 1/2 Tbsp lemon juice)
- 1 Tbsp Sugar
- 1 Tbsp Ginger wine (or Cheongju/Sake)
- A pinch of toasted sesame seeds
- A drizzle of sesame oil
- 2 Tbsp Soy sauce
- 3 Tbsp Mirin (rice wine)
- 2 Tbsp Rice syrup or corn syrup
- 1 Tbsp Lemon syrup (or 1/2 Tbsp lemon juice)
- 1 Tbsp Sugar
- 1 Tbsp Ginger wine (or Cheongju/Sake)
- A pinch of toasted sesame seeds
- A drizzle of sesame oil
Cooking Instructions
Step 1
Rinse the Korean chili peppers thoroughly under running water and remove their stems. Cut them in half lengthwise into bite-sized pieces. Cutting them in half helps them absorb the sauce better, making them even more flavorful.
Step 2
Remove the stem from the red chili pepper and slice it diagonally. This adds color and a subtle spicy kick. You can omit it if you don’t have one. Thinly slice the garlic cloves.
Step 3
In a small bowl, whisk together 2 Tbsp soy sauce, 3 Tbsp mirin, 2 Tbsp rice syrup, 1 Tbsp lemon syrup, and 1 Tbsp sugar to create the seasoning sauce. The lemon syrup will help neutralize any fishiness from the anchovies and add a refreshing note.
Step 4
Place the dried anchovies in a dry pan over low heat. Toast them gently until any moisture has evaporated. This step makes the anchovies crispier and enhances their nutty flavor. Transfer the toasted anchovies to a separate bowl. Use a sieve to gently shake off any small crumbs for a cleaner result.
Step 5
Heat 1 Tbsp of cooking oil in the pan over medium-low heat. Add the sliced garlic and stir-fry until it becomes fragrant and lightly golden. Once the garlic is fragrant, add the Korean chili peppers and stir-fry them. Adding 1 Tbsp of ginger wine at this stage helps to eliminate any unwanted odors from the chili peppers as they cook.
Step 6
When the Korean chili peppers have softened slightly, add the prepared anchovies and the seasoning sauce to the pan. Stir-fry quickly to coat everything evenly with the sauce. Continue to stir-fry until the sauce has thickened slightly. Just before turning off the heat, add the sliced red chili pepper, toasted sesame seeds, and sesame oil. Give it a final stir to combine everything, and your delicious Zesty Stir-Fried Anchovies are ready! Drizzling sesame oil and sprinkling sesame seeds right at the end will maximize their fragrant aroma.
