Zesty Lemon Crack Cookies
Lemon (Crack) Cookies: Bursting with Fresh Lemon Flavor!
My son squeezed fresh lemons, so I baked these delightful lemon cookies! These cookies are wonderfully bright and tangy, perfect for a delightful treat.
Cookie Dough Ingredients- 200g All-purpose flour
- 60g Almond flour
- 50g Butter, softened at room temperature
- 40g Sugar (or powdered sugar)
- 1 Egg, at room temperature
- 2-3 Tbsp Fresh lemon juice
- Zest of 1/2 lemon (yellow part only)
- 3 Tbsp Lemon oil (or lemon extract)
- 1 Tbsp Agave syrup (or honey)
- 2 Tbsp Milk
- 3 tsp Baking powder
- Powdered sugar, for coating
Cooking Instructions
Step 1
In a mixing bowl, cream together the softened butter and sugar until light and fluffy. If the butter isn’t creaming easily, you can gently warm the bottom of the bowl over a double boiler (a bowl set over simmering water) while stirring to help it emulsify.
Step 2
In a separate bowl, sift together the all-purpose flour, almond flour, and baking powder. Add the sifted dry ingredients to the butter-sugar mixture. Gently mix with a spatula or your hands until just combined and no dry flour streaks remain. Be careful not to overmix, as this can result in tough cookies.
Step 3
Add the lemon oil, fresh lemon juice, milk, and agave syrup to the dough. Mix until a cohesive dough forms. The dough should be slightly sticky; this consistency will help create a tender cookie. For an extra burst of lemon flavor, you can add a little finely grated lemon zest (from blanched lemon peel, removing the white pith) if desired.
Step 4
Shape the dough into small balls, about 1-1.5 inches in diameter. Place a generous amount of powdered sugar in a shallow dish and roll each dough ball thoroughly to coat it completely. This coating will create the characteristic cracked appearance after baking.
Step 5
Arrange the coated dough balls on a baking sheet lined with parchment paper, leaving some space between them as they will spread slightly. Bake in a preheated convection oven at 180°C (350°F) for about 12 minutes, or until the edges are lightly golden and the tops have developed a nice crackled appearance. Baking time may vary depending on your oven.
