Main Ingredients- 200g Japchae-style Pork (thinly sliced)
- 1 medium Onion
- 1 bunch Spinach
- 1/2 Carrot
- 1/2 Bell Pepper (use various colors for visual appeal)
- Shiitake or King Oyster Mushrooms (as desired)
- 2 servings Glass Noodles (Dangmyeon)

- 1 cup (200g) Sugar
- 2/3 Apple or Pear (grated)
- 6 Tbsp Minced Garlic (90g)
- 1 Tbsp Black Pepper (10g)
- 2 cups (400ml) Soy Sauce
Spinach Seasoning- 1/2 Tbsp Minced Garlic (7.5g)
- 1 tsp Sesame Oil (5ml)
- Pinch of Black Pepper
- Pinch of Toasted Sesame Seeds
Glass Noodles Seasoning- 2 Tbsp Soy Sauce (30ml)
- 1 Tbsp Sesame Oil (15ml)
- 2 cups (400ml) Water
- 1 cup (200g) Sugar

Cooking Instructions
Step 1
**[STEP 1] Prepare and Slice Ingredients:**
– Pat the pork dry with paper towels and slice it into bite-sized pieces.
– Slice the onion into strips. Julienne the carrot and bell pepper similarly.
– Trim the ends of the mushrooms and slice them.
– Wash the spinach thoroughly.
– Rinse the glass noodles under water and drain them in a colander.
Step 2
**[STEP 2] Make the Youn’s Kitchen Mother Sauce:**
– In a pot, combine water (2 cups), sugar (1 cup), grated apple or pear (2/3), minced garlic (6 Tbsp), black pepper (1 Tbsp), and soy sauce (2 cups). Stir well.
– Bring the mixture to a boil over medium-low heat, stirring until the sugar dissolves and the ingredients are well combined. Let it simmer for 2-3 minutes after it starts boiling to develop the flavors. Allow the sauce to cool slightly.
Step 3
**[STEP 3] Boil and Season Glass Noodles:**
– In a large pot of boiling water, add the glass noodles and 2 Tbsp of soy sauce. This step infuses the noodles with a subtle savory flavor.
– Boil for about 7 minutes, then drain the water. Toss the noodles with 1 Tbsp of sesame oil. Adding sesame oil prevents the noodles from sticking together and helps keep them moist if stored.
Step 4
**[STEP 4] Blanch and Season Spinach:**
– Blanch the spinach in boiling water for about 15 seconds. It’s important to keep the spinach slightly crisp.
– Rinse the blanched spinach under cold water and squeeze out excess moisture. In a bowl, mix the spinach with 1/2 Tbsp minced garlic, 1 tsp sesame oil, a pinch of black pepper, and a pinch of toasted sesame seeds. Gently toss to coat.
Step 5
**[STEP 5] Sauté All Ingredients and Complete Japchae:**
1. Lightly oil a pan and stir-fry the pork until fully cooked. Remove the cooked pork from the pan and set aside.
2. In the same pan, stir-fry the onion, carrot, bell pepper, and mushrooms over high heat until they are tender-crisp, maintaining their crunchiness.
3. In a large bowl, combine the cooked glass noodles, stir-fried pork, sautéed vegetables, and seasoned spinach.
4. Add about 3 Tbsp of the mother sauce to the bowl and mix everything together. Taste and adjust the seasoning by adding more mother sauce as needed. The amount of sauce can be adjusted based on the quantity of noodles and ingredients.
5. Gently toss all the ingredients to ensure they are evenly coated with the sauce. Be careful not to overmix, as this can break the noodles.
