How to Make a Delicious Winter Seasoned ‘Seomcho’ (Spinach) Salad ♡
My 9-year-old daughter loves this seasoned ‘seomcho’ salad! Winter ‘seomcho’ is naturally sweet and incredibly flavorful. It’s a dish we make often because it’s simple and a great side dish for kids. It’s so easy and healthy!
Ingredients- 1 bunch ‘Seomcho’ (winter spinach)
- 2 Tbsp chopped green onion
- 1 tsp minced garlic
- 1 Tbsp seasoning sauce (like ‘Yeondu’, or use light soy sauce/fish sauce)
- 1 tsp salt (adjust to taste)
- 1-2 Tbsp sesame oil
- 1-2 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Carefully trim the root ends of the ‘seomcho’ and wash it thoroughly under cold running water multiple times, ensuring all dirt is removed. Gently shake off excess water. It’s important to clean the spinach well so the roots don’t carry dirt.
Step 2
Bring a pot of water to a rolling boil. Once boiling, add the prepared ‘seomcho’ and blanch for exactly 10 seconds. Be careful not to overcook, as it can become mushy! Immediately remove the spinach and rinse it under cold water to retain its crisp texture and vibrant green color.
Step 3
Gently squeeze out as much water as possible from the blanched spinach with your hands. Excess water can dilute the seasoning. Place the squeezed spinach in a mixing bowl. Add the chopped green onion, minced garlic, seasoning sauce (‘Yeondu’ or alternative), and salt. Gently toss and mix everything together until well combined. Taste and adjust the salt if needed.
Step 4
Finally, drizzle in the sesame oil and sprinkle generously with toasted sesame seeds. Toss gently one more time to combine everything. This final touch adds a wonderful aroma and nutty flavor, completing this delicious ‘seomcho’ salad!
