Main Ingredients & Seasonings- 1/2 Korean radish (approx. 580g)
- 1 Tbsp minced garlic
- 2 Tbsp cooking oil
- 1/2 tsp salt
- 1 Tbsp tuna extract
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 100ml water
Cooking Instructions
Step 1
Prepare half a Korean radish (about 580g). It’s recommended to use the middle to upper parts of the radish, as they tend to be sweeter.
Step 2
Peel the prepared radish thoroughly using a vegetable peeler. While you can leave the skin on, peeling it results in a cleaner appearance.
Step 3
Slice the peeled radish into uniform pieces, about 0.5 cm thick. Uniform thickness ensures even cooking.
Step 4
Julienne the sliced radish into thin strips, similar to how you would cut for ‘mu-saengchae’ (radish salad). The thinner the strips, the better they absorb seasoning.

Heat a pan over medium heat and add 2 tablespoons of cooking oil, followed by 1 tablespoon of minced garlic.

Sauté the minced garlic over medium-low heat until fragrant and lightly golden brown. This step enhances the overall flavor profile.

Once the garlic is fragrant, add the julienned radish to the pan. Stir-fry until the radish becomes slightly translucent and tender, about 3-5 minutes. Avoid high heat to prevent burning.

When the radish is partially cooked, pour in 100ml of water. This helps to steam the radish and prevent it from sticking or burning.

Add 1/2 teaspoon of salt, 1 tablespoon of tuna extract, and 1 tablespoon of sesame oil. Stir everything well to ensure the seasonings are evenly distributed throughout the radish. Tuna extract adds a pleasant umami flavor.

Cover the pan with a lid and cook over medium-low heat for 3 minutes. At this stage, the radish will have a slightly firm texture.

After 3 minutes, remove the lid, stir the radish gently, and then cover again to cook for another 3 minutes. If you prefer a softer texture, you can extend this cooking time slightly.
