Main Ingredients- 250g fresh Windbreak Herb (Bangpungnamul)
- 1 tsp salt (for blanching)
Seasoning Ingredients- 1.5 Tbsp Doenjang (Korean soybean paste)
- 1 tsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1.5 Tbsp Doenjang (Korean soybean paste)

Cooking Instructions
Step 1
First, prepare your fresh Windbreak Herb (Bangpungnamul). Remove any wilted leaves or tough stems, and ensure the herb is clean.
Step 2
Bring a pot of water to a rolling boil and add 1 teaspoon of salt. Quickly blanch the prepared Windbreak Herb for just 30 seconds. Be careful not to overcook, as it will become too soft! Immediately rinse the blanched herb in cold water to stop the cooking process. Then, gently swish it in cold running water 2-3 times. This helps remove any raw grassy smell and keeps the herb crisp.
Step 3
After washing, thoroughly squeeze out as much water as possible from the Windbreak Herb. Excess water will dilute the seasoning. Place the squeezed herb in a bowl and add 1.5 Tbsp of Doenjang, 1 tsp of minced garlic, 1 Tbsp of fragrant sesame oil, and 1 Tbsp of toasted sesame seeds.
Step 4
Now, gently mix the ingredients with your hands or chopsticks, ensuring the seasoning is evenly distributed throughout the Windbreak Herb. If your Doenjang is very salty, start with a little less and adjust to taste.

Your Windbreak Herb salad with soybean paste is ready!
