Cookie Ingredients- 130g Almond flour
- 25g Unrefined sugar
- 1 Egg white
- 20 Whole almonds

Step 1
Begin by accurately measuring all the ingredients needed for the cookies. Having everything ready makes the baking process much smoother.
Step 2
In a bowl, combine the 130g of almond flour and 25g of unrefined sugar. While you don’t necessarily need to sift the almond flour, break up any large clumps with your fingers to ensure it’s well-aerated. This helps the sugar and almond flour mix more evenly.
Step 3
Add the 1 egg white to the almond flour and sugar mixture. The egg white will act as a binder, helping to bring the ingredients together into a cohesive dough.
Step 4
Using a spatula or spoon, stir the ingredients together until well combined. Mix until no dry flour is visible and a dough forms. If the dough feels too soft, you can chill it in the refrigerator for a short while to firm it up before proceeding. (I skipped this chilling step to keep things simple.)

Take small portions of the dough and gently roll them into round shapes between your palms. Then, place one whole almond on top of each round of dough and press down lightly with your finger to secure it. Pressing gently ensures the almond sits nicely on the cookie. (For a more appealing golden-brown finish, you can brush the tops with a lightly beaten egg yolk before baking. I omitted this for simplicity.)

Now it’s time to bake! Preheat your oven to 170-175°C (about 340-350°F). Arrange the prepared cookie dough on a baking sheet, leaving some space between each cookie. Bake for approximately 12 minutes. The cookies are ready when the edges turn lightly golden brown and the tops are set.

Carefully remove the cookies from the oven and transfer them to a wire rack to cool completely. They can be delicate when hot, so handle them gently. Once fully cooled, you can truly savor the unique nutty flavor and satisfyingly crisp texture of these almond cookies.
