Cooking Instructions

First, prepare the watermelon radishes. Wash them thoroughly with a soft scrub brush, keeping the peel on. The peel contains many beneficial nutrients, so washing it clean is all that’s needed.

Trim off the leafy green tops and the root ends of the watermelon radishes. Removing these parts will ensure a cleaner drying process.

Now, it’s time to slice the watermelon radishes, much like you would for making regular radish strips (mool-ssiam). Slice them into pieces that are not too thick, ensuring a consistent thickness for even drying. Look at that beautiful, watermelon-like color already! Even parts that seem slightly exposed to air have a captivating hue.

Place the sliced watermelon radishes in a food dehydrator set at 60-65°C (140-149°F) and dry them until completely crisp, which should take at least 3 hours. If you’re using an air fryer, refer to the manufacturer’s instructions for fruit or vegetable drying, using a similar temperature setting.

Once the watermelon radish strips are thoroughly dried, it’s time to gently roast them in a pan to enhance their flavor and aroma. Heat a dry pan over low heat. Add the dried radish strips and stir continuously for at least 5 minutes, ensuring they don’t burn. After roasting, spread them out on a cooling rack or tray to cool completely. To preserve the radish’s lovely natural color, I roasted mine in 5-minute intervals, repeating the process three times. Feel free to adjust the roasting time and frequency based on your preference.

The finished watermelon radish tea might visually resemble dried beet chips, but its taste and aroma are entirely different. Unlike regular radishes, watermelon radishes have a cooling property. Therefore, I often mix this watermelon radish tea with regular dried radish tea to enjoy the benefits of both without it being too ‘cooling.’ This blend allows you to appreciate the unique qualities of each.
