Key Ingredients
  • 2 fresh eggs
  • 18g scallions (about 1/4 stalk), thinly sliced
  • 0.5 Tbsp minced garlic
  • 2 broth cubes (e.g., dashi, chicken)
  • 2 Tbsp tuna extract (or fish sauce/soy sauce)
  • 2 pinches of salt
  • 800ml water
  • Pinch of black pepper

Cooking Instructions

Step 1

First, prepare all your ingredients. Crack 2 fresh eggs into a clean bowl. Thinly slice about 1/4 stalk of scallions. Have your 2 broth cubes and 0.5 Tbsp of minced garlic ready.

Step 2

In the bowl with the eggs, add 2 pinches of salt to help remove any eggy smell. Gently whisk the eggs with a spoon until the yolks and whites are well combined, creating a smooth egg mixture.

Step 3

Pour 800ml of water into a pot. Add the 2 broth cubes to the water and place the pot over high heat. Bring it to a rolling boil to ensure the broth flavor is well infused.

Step 4

Once the water is vigorously boiling, slowly drizzle the prepared egg mixture into the pot, pouring it in a circular motion around the edges. Let the egg cook undisturbed for about 10-20 seconds until it starts to set around the edges.

Step 5

As the egg cooks, it will float to the surface in fluffy curds. Gently stir the soup with a spoon or ladle, moving from the center outwards, to break the egg into bite-sized pieces. Be careful not to stir too vigorously.

Step 6

Add 2 Tbsp of tuna extract for a savory depth of flavor and stir gently to combine. Taste the soup; if it feels a bit bland, you can adjust the seasoning by adding more salt or tuna extract to your preference.

Step 7

Once the soup is seasoned to your liking, add the sliced scallions and minced garlic. Let it simmer for another minute to allow the flavors to meld and the scallions to soften slightly, then turn off the heat. Avoid overcooking at this stage, as the egg can become tough.

Step 8

With the heat turned off, sprinkle a pinch of black pepper over the soup for an extra aromatic touch. Give it a final gentle stir. Your incredibly simple and delicious egg drop soup using broth cubes is ready to enjoy!
