During the Chuseok holiday, enhance your celebratory feast with this warm and delicious Egg and Chives Pancake. The fragrant chives and savory eggs come together to create a representative holiday dish that everyone, young and old, can enjoy.
Main Ingredients- 1 bunch fresh chives (approx. 200g)
- 2 spicy Cheongyang peppers
- 1 red bell pepper (for color)
- 30 Tbsp pancake mix (approx. 1.5 cups)
- 30 Tbsp cold water (approx. 1.5 cups)
- 3 fresh eggs

Cooking Instructions
Step 1
First, thoroughly wash the fresh chives under running water to remove any dirt or debris. It’s best to let them drain well in a colander to remove excess moisture.
Step 2
Once the chives are drained, cut them into manageable lengths of about 4-5 cm. Cutting them too long can make the pancake difficult to cook.
Step 3
Finely mince the Cheongyang peppers and the red bell pepper after removing the seeds. These will add a pleasant spiciness and vibrant color.
Step 4
In a large bowl, combine the cut chives and minced peppers. Sprinkle the 30 Tbsp of pancake mix evenly over the ingredients. Using a spoon, gently mix the chives and mix so they don’t clump together, forming a batter. Gradually add the 30 Tbsp of water while stirring well, ensuring the mix is smooth and lump-free. The batter should be slightly thick, not too watery.
Step 5
Add 1 tsp of salt to balance the flavors and 6 grinds of black pepper for an aromatic touch. Mix again thoroughly to season the batter.
Step 6
In a separate small bowl, crack the 3 eggs and whisk them gently until well combined and smooth. Beating the eggs until smooth will help them spread evenly over the pancake.

Now it’s time to cook. Heat a generous amount of cooking oil in a frying pan over medium-low heat. Once the pan is sufficiently hot, ladle about one serving of batter onto the pan. Spread it out thinly into a round shape. Cooking it thinly ensures it cooks through evenly and becomes delightfully crispy. When the edges start to turn golden brown, it’s almost time to flip.
Step 8
Once one side of the pancake is golden brown, carefully pour the whisked egg mixture into the center of the pancake. Using the back of a spoon, gently spread the egg mixture over the chives. As the egg cooks, it will enhance both the flavor and visual appeal of your pancake.
Step 9
When the pancake is fully cooked and golden brown, use chopsticks to tear it into bite-sized pieces and arrange them on a plate.
