  • 150g radish (after trimming)
  • 1/2 stalk of green onion

First, let’s prepare the radish, which will give the soup its refreshing taste. Peel the radish and slice it thinly into uniform pieces (about 0.5cm thick). Slicing it thinly helps the flavor infuse quickly and ensures it cooks tenderly.

Cut the square fish cakes into bite-sized pieces, about 2cm wide and elongated. This size is easy to eat with the soup, and they become delightfully soft and plump as they cook.

Finally, finely chop the green onion. Using both the white and green parts will add more depth to the flavor.

Now, pour 1.2L of anchovy and kelp broth into a pot and bring it to a boil over high heat. Once the broth is boiling vigorously, add the sliced radish. Season with 1/2 Tbsp of soy sauce for soup and 1 Tbsp of tuna extract. Cover the pot, reduce the heat to medium, and simmer for about 10 minutes until the radish becomes translucent and tender.
