How to Make a Delicious and Clear Fish Cake Soup
On these cooler mornings and evenings, I decided to make a refreshing and clean fish cake soup with thinly sliced radish. It’s a comforting and flavorful dish perfect for a cozy meal.
Ingredients- Fish cakes (Eomuk) 250g
- Radish 80g
- Cheongyang chili pepper (optional, for heat) a pinch
- Red chili pepper (optional, for color) a pinch
- Green onion a pinch
- Broth (anchovy-kelp based) 800ml
- Soup soy sauce (Guk-ganjang) 1 Tbsp
- Fish sauce (or tuna extract) 1 Tbsp
- Cooking wine (Mirin) 1 Tbsp
- Black pepper a pinch
Cooking Instructions
Step 1
First, prepare the vegetables for the soup. Slice the radish into thin, flat pieces about 0.5cm thick. Chop the green onion and chili peppers (both red and green) diagonally into thin slices. These will add flavor and color to the soup.
Step 2
Briefly blanch the fish cakes in hot water for about 30 seconds. This step removes any excess oil or impurities, resulting in a cleaner-tasting broth. After blanching, rinse them under cold water to maintain their firm texture.
Step 3
Cut the blanched fish cakes into bite-sized pieces, typically 2 to 3 pieces per cake. For a visually appealing presentation, you can thread the fish cakes onto skewers.

Now, let’s start boiling the broth. Pour 800ml of anchovy-kelp broth into a pot and add the thinly sliced radish. Let it simmer to extract the radish’s refreshing flavor into the broth.

Once the broth comes to a boil, reduce the heat to medium-low and simmer for 8 to 9 minutes, or until the radish becomes translucent. If you used a stock bag, remove it. Continue to simmer the radish for another 2 minutes until it’s tender.

It’s time to season the soup. Add 1 Tbsp of soup soy sauce, 1 Tbsp of fish sauce (or tuna extract), and 1 Tbsp of cooking wine (mirin) to enhance the flavor. You can adjust the seasoning later, so start with a moderate amount.

Add the prepared fish cakes to the pot and sprinkle in a pinch of black pepper for a hint of spice. Let the soup simmer gently after adding the fish cakes to allow their savory flavors to infuse into the broth.

Finally, add the sliced green onions and chili peppers. Simmer for just 1 more minute. Avoid overcooking the vegetables to retain their fresh texture and aroma.
