Ingredients
  • 1/2 cup soaked dried seaweed (approx. 30g)
  • 1/4 block firm tofu (approx. 75g)
  • A little chopped green onion (for garnish)
  • 3 cups water (720ml)
  • 1 piece dried kelp (5x5cm)
  • 2 Tbsp Doenjang (Korean soybean paste, approx. 30g)
  • 0.5 Tbsp minced garlic (approx. 5g)

Cooking Instructions

Step 1

First, gently squeeze out the excess water from the 1/2 cup of soaked dried seaweed and cut it into bite-sized pieces (about 2-3cm). Dice the 1/4 block of firm tofu into approximately 1.5cm cubes. Preparing the ingredients in advance will help speed up your cooking time.

Step 2

In a pot, combine 3 cups of water (720ml) and 1 piece of kelp. Bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for another 2-3 minutes to extract the rich umami flavor from the kelp. Then, carefully remove and discard the kelp. Be mindful not to over-boil the kelp, as it can develop a bitter taste.

Step 3

Into the clear broth made from the kelp, dissolve 2 tablespoons of Doenjang (Korean soybean paste). It’s best to use a sieve to ensure the paste dissolves smoothly without clumps, resulting in a cleaner and milder soup. Gently stir with a spoon to fully incorporate the Doenjang.

Step 4

Add the pre-cut seaweed and diced tofu to the Doenjang broth. Also, stir in 0.5 tablespoon of minced garlic. Bring the soup to a boil over high heat and let it simmer briefly. Be careful not to stir too vigorously to prevent the tofu from breaking apart.

Step 5

Once the soup comes to a rolling boil again, reduce the heat to low and simmer for an additional 1-2 minutes, allowing the flavors to meld together. Finally, garnish generously with the chopped green onion to complete your delicious Seaweed Doenjang Soup!
