A bowl of nourishing chicken porridge the whole family can enjoy! This is the perfect choice to warm you up on a chilly day. Made with simple ingredients, it’s easy to prepare at home, boasting a wonderfully smooth texture and a savory, mild flavor.
Chicken Porridge Ingredients- 400g chicken breast (for a tender porridge)
- 1/2 carrot (finely diced)
- 1/2 yellow bell pepper (seeds removed, finely diced)
- 1/2 red bell pepper (seeds removed, finely diced)
- 1 onion (finely minced)
- 1/2 green onion (chopped)
- A little olive oil (for sautéing vegetables)
- 1 Tbsp Dashida (or chicken broth) (enhances flavor)
- 4 servings of rice (leftover or freshly cooked rice works)
- A pinch of salt (adjust to your taste)
Cooking Instructions
Step 1
First, thoroughly wash and prepare all the vegetables for the chicken porridge. Finely dice the carrot, yellow bell pepper, and red bell pepper into small cubes after removing the seeds. Mince the onion as finely as possible to ensure a smooth porridge texture.
Step 2
Separately prepare the minced onion. Finely mincing the onion will help bring out its sweetness when sautéed, enhancing the overall flavor of the porridge.
Step 3
Wash and chop the green onion. You can either set it aside to use as a garnish on the finished porridge or add it during the sautéing process to infuse its aroma.
Step 4
Heat a pot over medium heat and add a little olive oil. Once the pot is adequately warm, get ready to sauté the ingredients.
Step 5
Add the finely diced carrot, bell peppers, and onion to the pot. Sauté over medium-low heat until they become translucent. It’s important to sauté the vegetables until their natural sweetness is released.
Step 6
Shred the chicken breast into bite-sized pieces, following the grain. For extra tenderness, you can briefly boil the chicken breast before shredding.
Step 7
Add the prepared shredded chicken breast to the pot with the sautéed vegetables and cook together for another 2-3 minutes. The chicken will cook and add its delicious flavor to the vegetables.
Step 8
To create a rich broth, dissolve 1 tablespoon of Dashida in about 7-8 cups of water (or chicken broth). (Adjust the amount of water based on the quantity of rice and desired consistency.)
Step 9
Pour the prepared Dashida broth into the pot containing the sautéed chicken and vegetables. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10 minutes to allow the chicken flavor to fully infuse into the broth.
Step 10
While the broth is simmering, add the rice. Make sure to break up any clumps of rice as you add it.
Step 11
Continue to stir and cook over medium-low heat until the rice has softened and the porridge has thickened to your desired consistency. Be careful to prevent the rice from sticking to the bottom of the pot.
Step 12
Season the chicken porridge. Add salt a little at a time, adjusting to your personal preference. You can also add a pinch of black pepper if desired.
Step 13
Ladle the delicious, finished chicken porridge into warm bowls. Garnish with the chopped green onions you prepared for an even more appealing presentation. Enjoy this warm and filling bowl of chicken porridge!
