That’s why today, I’ve prepared a perilla seed kalguksu that’s not only simple to make at home but also incredibly healthy. Perilla seeds are like a winter tonic.   • 1/2 Onion
  • 1/3 Zucchini
  • 8-9 Clams
  • 1/4 Green onion stalk
  • 500ml Anchovy-Kelp Broth
  • 3 Tbsp Perilla seed powder
  • 1 Tbsp Soy sauce for soup (Guk-ganjang)

Cooking Instructions

First, prepare your vegetables. Thinly slice half an onion and cut one-third of a zucchini into half-moon shapes. If you have potatoes on hand, adding one would also enrich the broth beautifully.

Now, let’s prepare the broth. Using an anchovy-kelp broth will add a savory depth, but feel free to use store-bought seafood broth or any broth you have on hand – it will all be delicious. Prepare about 500ml.

Once the broth is at a rolling boil, add the prepared zucchini and onion. Then, toss in the thoroughly washed clams. Clams add a wonderful umami flavor, but if they are difficult to find, you can certainly omit them.

When the broth comes to another boil, it’s time to add the kalguksu noodles. For chewier noodles, you can briefly rinse them in cold water before adding, or add them directly for a softer texture, depending on your preference.

After adding the noodles and letting them boil for a moment, it’s time for the star ingredient: perilla seed powder! I added about 3 tablespoons. If you prefer a thicker, richer broth, feel free to add more according to your taste.

Now, let’s season it. Add 1 tablespoon of soy sauce for soup (Guk-ganjang) to balance the flavors. If you feel it needs more seasoning, you can add a pinch of salt to adjust it to your liking.
