  • 1/3 Enoki mushroom
  • 1/4 Green onion (mostly white part)
  • A small bunch of Crown daisy (Shungiku)
  • 1 Pack of commercial seafood broth base (or kelp/anchovies)

Seasoning

  • 1/2 Tbsp Soy sauce for soup
  • 1/2 tsp Salt

Cooking Instructions

First, prepare the fish cakes. Lightly rinse the fish cakes under cold water. Then, cut them into bite-sized pieces for easy eating. You can cut them lengthwise or into triangles, depending on your preference.

Wash the green onion thoroughly and slice it thinly. Using the white part of the green onion will add a refreshing flavor to the broth, making it even more delicious. You can use a little of the green part for aroma at the end or omit it if you prefer.

Trim the base of the enoki mushrooms with a knife or gently separate them with your hands. Then, rinse them by gently shaking under running water. Separate them into strands as if they were just blooming.

Now, let’s make a delicious broth! Pour 3-4 cups of water into a pot and add the commercial seafood broth base. If you don’t have a seafood broth base, you can use kelp or anchovies to create a deep and refreshing broth. Let the broth simmer for about 5-7 minutes to extract the flavors.

Once the broth comes to a boil, remove the used broth base and add the prepared fish cakes. Simmer for about 3-5 minutes until the fish cakes are tender. Be careful not to overcook them, as they can become mushy.
