Ingredients- 1 clove garlic, thinly sliced
- 1/4 onion, thinly sliced
- 2-3 dried bird’s eye chilies, deseeded and crushed (optional, for heat)
- 2 Tbsp dry white wine
- 100g pre-cooked clams (vongole)
- 2 ladles of Vongole stock (or clam broth)
- Pinch of black peppercorns, crushed
- Pinch of salt
Cooking Instructions
Step 1
Begin by thinly slicing the garlic cloves and thinly slicing the quarter onion. Heat a generous amount of olive oil in a frying pan over medium-low heat. Add the sliced garlic and gently sauté until fragrant and lightly golden. Then, add the sliced onions and continue to cook until they soften and begin to turn translucent. Increase the heat to high, add the pre-cooked clams to the pan, and stir-fry briskly.
Step 2
Once the clams start to open, carefully pour in the 2 tablespoons of dry white wine. Be prepared for a brief flare-up as the alcohol evaporates – this is normal. Let the wine simmer and cook off for about a minute, allowing its aroma to infuse the pan.
Step 3
Pour in the 2 ladles of Vongole stock (or clam broth) and a splash of water if needed. Add the crushed bird’s eye chilies for a touch of heat, if desired. Bring the stock to a rolling boil. Add your cooked pasta to the pan and toss continuously with chopsticks or tongs to ensure every strand is coated in the flavorful sauce. Continue to cook until the sauce has reduced to about 1-2 tablespoons, creating a luscious consistency. Season with salt and freshly crushed black pepper to taste.
