Ye Eun’s Early Puree: Vitamin Cubes with 9x Oatmeal Rice Porridge (Butternut Squash Topping)
This is an early stage baby food recipe featuring a new ingredient: vitamin. Today, instead of using a blender, we’ll finely chop it by hand to create a texture that helps with your baby’s chewing practice. Serve with 9x concentrated oatmeal rice porridge and nutrient-rich vitamin topping along with butternut squash.
Puree Ingredients- Vitamin 174g
Cooking Instructions
Step 1
Similar to how you prepare bok choy, the stems of the vitamin can be difficult for babies to digest. So, trim off the stem part and use only the leaves.
Step 2
The initial 174g of vitamin reduced to 79g after removing the stems.
Step 3
Soak the vitamin leaves in water with a small amount of baby-specific fruit and vegetable wash for about 5 minutes to clean them thoroughly.
Step 4
After 5 minutes, rinse the vitamin leaves under running water until clean.
Step 5
Drain the washed vitamin leaves well using a colander and let them sit to remove excess moisture.
Step 6
Bring water to a boil in a pot. Once boiling, add the washed vitamin leaves.
Step 7
Blanch the vitamin leaves for about 1 minute. This helps to soften them while preserving their nutrients.
Step 8
After 1 minute, carefully lift the blanched vitamin leaves out with a sieve.
Step 9
Spread the blanched vitamin leaves out on the colander to cool down. It’s easier to chop them once they’ve cooled slightly.
Step 10
Once the vitamin has cooled enough to handle, gently squeeze it by hand to remove any remaining water. Removing excess moisture will help achieve a uniform chop.
Step 11
Finely chop the vitamin leaves with a knife until they reach a texture suitable for your baby’s consumption. For early stage purees, it’s important to chop them as smoothly as possible.

I’ve tried to chop them as finely as I can. I think this texture will be perfect for our baby!
Step 13
Portion the finely chopped vitamin into baby food cube molds, about 5g each. Leafy greens shrink significantly when blanched, so 5g should be sufficient considering a baby eats about 50g of porridge per meal.
Step 14
Place the filled cube molds on a tray and put them in the freezer for rapid freezing.
Step 15
Once the cubes are frozen solid, remove them from the mold and wrap them individually. We’ll use Glad Magic Wrap for neat individual packaging.
Step 16
Twist the ends of the Glad Magic Wrap like a candy wrapper for a cute presentation.
Step 17
Store the individually wrapped vitamin cubes in an airtight container or a zip-top bag in the freezer. Properly stored, they can last for about 2-3 weeks. However, it’s best to use them within 1-2 weeks for optimal freshness!

Warm up the pre-made 9x oatmeal rice porridge, add the butternut squash topping warmed via double boiler, and finally, add the vitamin side dish. And Ye Eun’s delicious meal is complete! Nourish your baby’s health with this nutritious puree.
