  • 1 piece of pink sausage (approx. 5-6cm length, 1-1.5cm thick)

Prepare the eggs. From the 5 eggs, use 2 whole eggs and separate the yolks from the remaining 3 eggs, adding those 3 yolks. Collect the whites from 3 eggs separately. This technique helps achieve a soft texture and rich color in the omelet.

Finely chop the green onions. Wash them, pat them dry, and then chop them into small pieces, about 0.5cm in size. This will create a beautiful scattering of green on top of the omelet.

Slice the pink sausage thinly, about 0.5cm thick. Thin slices will help in shaping the omelet neatly when rolling.

Use the sliced pink sausage pieces to create flower shapes. You can use cookie cutters or small decorative molds for convenience. I made about 11 flower shapes from this amount of sausage. The number of flowers isn’t critical, so feel free to make as many as your sausage allows.

Finely mince the remaining pink sausage. In a large bowl, whisk together the 3 egg yolks and the 2 whole eggs. Add the minced sausage and the prepared mixed vegetables. Season with a pinch of salt and whisk everything together until well combined. Also, whisk the separately collected egg whites in another clean bowl.

Lightly oil a heated pan and spread it thinly with a paper towel. Pour the egg yolk mixture thinly to cover the pan. As the egg starts to set, carefully begin rolling it from one edge. Instead of pouring a thick layer, it’s better to pour thin layers multiple times and roll them up for a prettier and softer omelet.

Once you’ve rolled the omelet partway, place the prepared flower-shaped sausage pieces on top of the rolled egg. It’s important to arrange them so the flower shapes face upwards and the bottom of the sausage adheres well to the egg. Ensure the sausages are positioned so they won’t easily detach.

After placing the sausage flowers, pour the whisked egg whites evenly over the omelet and the sausage. Make sure the egg whites slightly cover the sausage pieces. Finally, sprinkle the finely chopped green onions over the egg whites for decoration. The green of the onions will beautifully complement the omelet.

Now, carefully roll the omelet completely. It’s crucial to cook over low heat to ensure the inside is thoroughly cooked. Gently cook all four sides of the rolled omelet until golden brown; this will help it hold its shape and ensure even cooking. Once done, wrap the omelet in a bamboo mat or parchment paper and let it cool slightly. Cutting it while hot can cause the shape to distort, so allow it to cool before slicing into desired portions to reveal the neat flower patterns. For an extra decorative touch when serving, add small dots of ketchup or mustard on top of the flowers on the plate.
