Ingredients

  • 1 block soft tofu
  • 2 eggs
  • 1 sheet of seaweed for kimbap
  • 1 Tbsp starch powder
  • 1 Tbsp pancake mix
  • 1/3 Tbsp curry powder
  • 1/4 tsp salt

Cooking Instructions

Step 1

First, prepare one block of soft tofu. Carefully open the packaging and gently press out any excess water with a paper towel. Lightly sprinkle 1/4 tsp of salt evenly over the surface of the tofu. Then, place the salted tofu in the refrigerator for about 30 minutes to 1 hour. This process, called ‘draining the water’ or ‘curing’, helps to remove moisture through osmosis, making the tofu firmer and easier to handle without it falling apart.

After draining, pat the soft tofu dry again with a paper towel. Lay one sheet of kimbap seaweed flat with the rough side facing up. Place the firm, drained soft tofu lengthwise onto the seaweed. Now, carefully roll the seaweed around the tofu, ensuring it’s wrapped snugly. Roll it up tightly, just like making kimbap.

Once rolled, cut the soft tofu and seaweed roll into bite-sized pieces. You can cut them into small portions for children or slightly larger pieces for adults to enjoy as a snack. Cutting them about 1.5 to 2 cm thick will provide a pleasant texture.

In a bowl, combine 1 Tbsp of starch powder, 1 Tbsp of pancake mix, and 1/3 Tbsp of curry powder for a fragrant touch. Mix these dry ingredients well to create a coating. Gently coat each piece of the cut soft tofu roll in this powder mixture, ensuring both sides are evenly covered. Lightly shake off any excess powder. This step helps the dry coating adhere to the moist tofu, preparing it for the egg wash.

In a separate bowl, whisk two eggs until well beaten to create an egg batter. Dip each powder-coated soft tofu roll into the egg batter, ensuring it’s fully coated. Heat a pan over medium-low heat with a generous amount of oil. Carefully place the egg-coated soft tofu rolls into the hot pan.
