Cooking Instructions
Step 1
Make three diagonal cuts into the Vienna sausages. This helps them open up nicely when cooked and allows the flavors to penetrate better. (This step is optional but makes the sausages look appealing and absorb more flavor.)
Step 2
Bring a pot of water to a boil. Add the Vienna sausages and blanch them briefly. This step helps remove excess grease and makes the sausages tender.
Step 3
Once the cuts on the sausages start to open slightly, remove them from the boiling water. Drain them and let them cool down a bit. Be careful not to over-blanch, as the sausages might lose their shape.
Step 4
Chop the kimchi into bite-sized pieces using scissors or a knife. Avoid chopping it too finely, as it might become mushy when stir-fried. Finely mince the green onion.
Step 5
Now, let’s start stir-frying! Heat a pan over medium-low heat and add 4 tablespoons of cooking oil. Add the kimchi and begin to stir-fry. Keep the heat at medium-low to prevent the kimchi’s seasoning from burning and stir until the kimchi softens.
Step 6
Once the kimchi has softened considerably, add the oyster sauce and sugar. Continue to stir-fry, ensuring the seasonings are well combined with the kimchi. Taste the kimchi and add salt later if needed, depending on its saltiness.
Step 7
Refer to the captions in the accompanying photos for additional guidance.
Step 8
After stir-frying the kimchi with the seasonings, add the blanched Vienna sausages, minced green onion, and gochugaru. Stir everything together.
Step 9
Manage the heat carefully to prevent the seasonings from burning. There’s no need to overcook the sausages after adding them; just stir-fry them enough so they are coated with the sauce. This will help maintain their delightful, firm texture.
Step 10
Once everything is well combined and cooked, turn off the heat. While the dish is still hot, stir in the sesame oil, toasted sesame seeds, and a pinch of black pepper. This final touch adds a wonderful aroma and flavor.
Step 11
Your delicious Vienna Sausage Kimchi Stir-fry is ready! Enjoy this fantastic dish with a bowl of hot rice.
