Ingredients- 150g Vienna sausages
- 6 fresh free-range eggs
- 80g carrot
- 70g green onion
Seasoning- 1 tsp salt
- 2 tbsp olive oil
- A tiny pinch of ground pepper

Cooking Instructions
Step 1
First, slice the Vienna sausages into small, bite-sized pieces. You can cut them into fun shapes if you like, especially for kids.
Step 2
Peel and finely mince the carrot. Aim for a size similar to the sliced sausages for a pleasant texture. The carrot will add a touch of sweetness.

Finely chop the green onion. Try to cut them to a similar size as the sausage pieces for consistency. The green onion will add a fresh aroma.

Crack the 6 fresh free-range eggs into a bowl. Using a chopstick, carefully remove the chalazae (the white, stringy bits) from the egg whites. This step helps create a smoother scramble.

Add 1/2 teaspoon of salt to the eggs and gently whisk them until just combined. Avoid over-whisking to maintain a tender texture.

Heat 2 tablespoons of olive oil in a non-stick pan over medium heat. Add the chopped green onions and minced carrots and sauté for about 1 minute until fragrant.

After 1 minute, add the sliced Vienna sausages to the pan. Sprinkle in the remaining 1/2 teaspoon of salt. Stir and cook for about 3 minutes, allowing the sausages to brown slightly and release their flavor.
