Main Ingredients- 1/2 cup frozen corn kernels
- 1 carrot, diced
- 1/2 beetroot, diced
- 4 potatoes, diced
- 1.5 king oyster mushrooms, cut into bite-sized pieces
- 1 onion, diced
- 5 heads of bok choy, trimmed and cut into 2-3 sections
- 3 blocks of solid curry roux (approx. 75g, adjust to taste)
Cooking Instructions
Step 1
In a pot, add the frozen corn kernels. Peel and dice the carrot, beetroot, and potatoes into uniform cubes of about 1.5-2 cm. Add these to the pot. Ensuring similar sizes will help them cook evenly.
Step 2
Pour in enough water to cover the vegetables. Bring to a boil over high heat, then reduce to medium heat and simmer until the vegetables are tender.
Step 3
Once the potatoes are fork-tender (easily pierced with a fork), add the diced onion and the bite-sized king oyster mushrooms. Continue to simmer for about 5 more minutes. The beetroot will release a beautiful reddish hue into the curry.
Step 4
Lower the heat to low. Add the solid curry roux blocks and stir gently until completely dissolved, ensuring no lumps remain. Slowly stirring prevents clumping. Once the curry is smooth, add the prepared bok choy and gently mix. Turn off the heat and cover the pot. The residual heat will cook the bok choy perfectly without making it mushy. Be careful not to overcook.
