Main Ingredients- 1 Clementine (or Mandarin Orange)
- 1 Apple
- 1/2 Cucumber
- 1/2 Bell Pepper (any color)
- 1/2 Bell Pepper (different color, optional)
- 5 Tbsp Mayonnaise
- 1/2 tsp Brown Sugar
- 2 Pinches Black Pepper
- 1/2 tsp Salt

Step 1
First, wash the cucumber thoroughly and chop it into bite-sized pieces, about 0.5 to 1 cm thick. Sprinkle the chopped cucumber with 1/2 tsp of salt and let it sit for about 10 minutes to draw out excess moisture. This step helps keep the cucumber crisp and prevents the salad from becoming watery.
Step 2
While the cucumber is salting, peel the clementine and separate it into segments. Core the apple and bell peppers (using two different colors will make the salad more visually appealing), then dice them into bite-sized cubes. You can peel them if you prefer. After 10 minutes, gently rinse the salted cucumber under cold water to remove the salt. Pat it thoroughly dry with paper towels to remove as much moisture as possible.
