Pâte Sucrée (Tart Crust)

Let’s start by making the tart crust. In a food processor, combine the sifted cake flour, bread flour, almond flour, sugar, and salt. Add the cold, cubed butter and pulse in short bursts until the mixture resembles coarse crumbs, with some pea-sized pieces of butter remaining. Transfer this mixture to a large bowl. Add the beaten cold egg and use two bench scrapers to quickly and gently cut and fold the ingredients together until the dough just begins to come together.

Tip: While a food processor is convenient, incorporating the wet ingredients and bringing the dough together by hand in the final stage can help prevent overmixing, leading to a more tender crust. Use your scrapers to lightly mix and fold rather than kneading.

This dough is your ‘pâte sucrée’! Wrap it tightly in plastic wrap and refrigerate for at least one day to rest. This resting period allows the gluten to relax, resulting in a crisper and more flavorful tart shell.
