Ingredients- 3 servings of leftover cooked rice
- A small piece of beetroot (about 1/4 of a medium beet, or to taste)
- 1/4 medium onion
- 1-2 dried shiitake mushrooms, rehydrated
- Bacon (as much as you like)
- 2 tablespoons soy sauce (seasoned)
- 1/4 teaspoon salt
Cooking Instructions
Step 1
First, prepare all your ingredients by chopping them into bite-sized pieces. Dice the onion finely. For extra flavor and texture, you can finely chop any leftover garnishes like egg crepes or carrots from a previous meal and add them in – fried rice is a fantastic way to use up leftovers!
Step 2
Heat a pan over medium-high heat and start by frying the bacon. Cook it until it’s nice and crispy for the best flavor. You won’t need much extra oil, as the bacon will render its own fat. If the pan seems dry, add just a tiny bit of cooking oil.
Step 3
Add the finely chopped rehydrated shiitake mushrooms to the pan and sauté them with the bacon. If you don’t have shiitake mushrooms, you can skip this step, but they add a wonderful umami depth and chewy texture.

Toss in the diced onion and sauté until it becomes translucent and fragrant. The sweetness of the onion will infuse the entire fried rice.
Step 5
Now for the star ingredient: beetroot! Even a small amount of beetroot will give your fried rice a vibrant, beautiful red hue. Finely chop about 1/4 of a beetroot and add it to the pan with the other vegetables. If you’re concerned about the earthy flavor of raw beetroot, you can briefly blanch it in boiling water before chopping.

The key to great fried rice is using ‘day-old’ or slightly firm rice. Add your leftover rice to the pan. Use your spatula to break up any clumps and stir-fry, ensuring the rice grains are separated and mixed well with the other ingredients.
Step 7
We’ll season the rice with seasoned soy sauce and salt. Pour 2 tablespoons of seasoned soy sauce into a clear space in the pan and let it sizzle and caramelize slightly before mixing it with the rice. This step enhances the savory flavor and helps the sauce distribute evenly. Once the soy sauce has heated, mix it thoroughly with the rice and vegetables.
Step 8
Add about 1/4 teaspoon of sea salt for the final seasoning. You can adjust the amount of salt to your personal preference.
Step 9
Continue to stir-fry everything together for another minute until well combined. Then, turn off the heat. The residual heat from the pan will finish cooking the rice perfectly, preventing it from becoming mushy.
