Super Easy Homemade Turmeric Pickled Radish Recipe: Master it for Side Dishes and Gimbap!
Make beautiful and delicious healthy pickled radish using water-soluble turmeric. Its sweet and sour flavor complements any dish perfectly.
Main Ingredients- 1/2 daikon radish (approx. 500g)
- 1.2 cups water (240ml)
- 1/2 Tbsp salt (7.5g)
- 1 cup brown rice vinegar (200ml)
- 1 cup organic cane sugar (200g)
- 2 capsules turmeric (liquid form)
Cooking Instructions
Step 1
Thoroughly wash and prepare the fresh daikon radish. You can leave the peel on, but if you prefer a cleaner taste, peel it thinly. Now, let’s slice the radish. For side dishes, slice it thinly. For gimbap, cut it into slightly thicker, longer strips for a satisfying texture. Slicing them in various thicknesses allows you to enjoy them according to your preference.
Step 2
Place the sliced radish into separate containers. While it’s convenient to divide them for side dishes and gimbap, you can also combine them in one container. Either way, it won’t affect the cooking process, so prepare them as you prefer.
Step 3
Let’s make the pickling liquid that will give the pickled radish its signature sweet and sour taste. In a pot, combine 1.2 cups of water, 1 cup of organic cane sugar, and 1/2 Tbsp of salt. It’s crucial to stir well until the sugar and salt are completely dissolved.
Step 4
Now, add 1 cup of brown rice vinegar. After adding the vinegar, bring the mixture to a simmer over medium-low heat. Continue to simmer until the sugar and salt are fully dissolved and the liquid has a slight sheen. Once it starts to boil, simmer for an additional 1-2 minutes to evaporate the alcohol, which results in a cleaner flavor.
Step 5
It’s time to add the turmeric to enhance the health benefits and vibrant color of the pickled radish. Add the 2 capsules of liquid turmeric to the pickling liquid and mix well. If you find turmeric slightly bitter, you can adjust the amount, or add more capsules if you desire a deeper color.
Step 6
Pour the hot turmeric vinegar mixture over the sliced radish in the containers. Ensure the radish is completely submerged in the liquid. Cover the containers tightly with lids or plastic wrap, and let them sit at room temperature for half a day (about 6-8 hours) to pickle. Afterward, store them in the refrigerator. After about two days of resting in the fridge, you’ll have delicious, perfectly pickled sweet and sour radish ready to enjoy!
