Seasoned Spinach Ingredients

  • 1 bunch spinach (approx. 300g)
  • Chopped green onion or scallion, a little (optional)
  • 1/2 Tbsp minced garlic
  • 2/3 tsp seasoned salt (or adjust with regular salt)
  • 1 Tbsp perilla oil (Korean sesame oil)
  • 1 Tbsp toasted sesame seeds
  • A pinch of salt for boiling water

Cooking Instructions

Prepare the fresh spinach by trimming the roots and removing any wilted or yellow leaves. Wash thoroughly under running water, making sure to clean the root areas to remove any dirt. Bring a generous pot of water to a boil and add a pinch of salt. Submerge the spinach roots first and blanch for about 30 seconds to 1 minute, just until wilted. Be careful not to overcook, as it will become mushy. Immediately transfer the blanched spinach to cold water to stop the cooking process. Once cooled, gently squeeze out as much water as possible with your hands. Removing excess water is key to preventing a watery dish and ensuring the seasoning adheres well.

Once the excess water is removed, cut the spinach into bite-sized pieces, about 2-3 inches long. Place the spinach in a large bowl. Add the chopped green onion (if using), minced garlic, and seasoned salt (or regular salt). Gently toss and mix everything together with your hands. Adjust the amount of salt according to your preference and the amount of spinach used. It’s best to start with less salt and add more after tasting.

Finally, add 1 tablespoon of fragrant perilla oil and 1 tablespoon of toasted sesame seeds. Gently mix again.
