Main Ingredients- 150g watermelon rind (use the white part, remove the green outer skin)
- 20g carrot (small size)
- 10g onion (small size)
Cooking Instructions
Step 1
First, carefully peel off the hard green outer skin of the watermelon rind with a knife. Also, remove as much of the red flesh as possible. You’ll only be using the white inner part, about 150g in total. Cut the prepared watermelon rind into bite-sized cubes, approximately 1 to 1.5 cm. Dice the carrot and onion into similarly sized cubes. Cutting all the vegetables into uniform pieces ensures they cook evenly, resulting in a more harmonious texture.
Step 2
Melt 1 tablespoon of butter in a frying pan over medium heat. Once the butter has melted, add the diced carrots and onions. Sauté them for about 2-3 minutes until they become translucent. As the onions soften and release their sweet aroma, they will meld beautifully with the other ingredients, enhancing the overall flavor of the curry.

When the watermelon rind turns slightly translucent and appears about half-cooked, stir in 4 tablespoons of curry powder.
