Ingredients- 2 Bagels
- 1 Potato (medium-sized)
- 1/2 Bell Pepper
- 2 Slices of Cheese
- Sliced Ham (to taste)
- 2 Eggs
- 1/2 Cucumber
- 1 handful Bonito flakes
- 4 Tbsp Mayonnaise
- 2 Tbsp Tonkatsu sauce
Cooking Instructions
Step 1
First, let’s prepare the core ingredients for our sandwich. The recipe calls for 1 potato, but note that the picture shows 2. Prepare one fresh, washed potato.
Step 2
Peel the potato and julienne it as thinly as possible. Thin slices ensure a tender and delicious result when cooked. To remove excess starch and maintain a slight crispness, place the julienned potatoes in a bowl of cold water with 1/2 tablespoon of salt and let them soak for 10 minutes. Julienne the bell pepper slightly thicker than the potatoes, and thinly slice the cucumber.
Step 3
After soaking, drain the potatoes and rinse them thoroughly a couple of times. Pat them dry completely on a sieve, and then use paper towels to absorb any remaining moisture. This step is crucial to prevent the pancake from becoming soggy. Combine the dried julienned potatoes with the julienned bell pepper in a bowl.
Step 4
Lightly grease a heated pan with oil. Arrange the julienned potato and bell pepper mixture compactly to form a thick pancake shape. If you have a sandwich mold, you can use it, or freehand it to match the size of your bagel.
Step 5
Crack one egg and let it drizzle over the potato mixture, especially into any gaps. Use a chopstick to gently spread the egg into the potato strands. This egg will act as a binder, holding the pancake together as it cooks.
Step 6
To ensure the potato pancake cooks through evenly, reduce the heat to the lowest setting. Cover the pan with a lid and cook until golden brown and crispy on both sides. Flip carefully with a spatula to avoid breaking it.
Step 7
Your delicious potato pancake patty, ready to be the star of the sandwich, is now complete! Look at that beautiful golden-brown color.
Step 8
Now, let’s assemble the sandwich. Slice the bagels in half. Lightly toasting them on a dry pan beforehand will add extra flavor and texture. Spread about 1 tablespoon of mayonnaise on the inside of each bagel half. Place the prepared potato pancake on the bottom half. Drizzle tonkatsu sauce in a zigzag pattern over the pancake. Next, layer the thinly sliced cucumber, a sprinkle of bonito flakes, followed by the sliced ham and cheese.
Step 9
Finally, place the top half of the bagel to complete your Unique Potato Pancake Bagel Sandwich – crispy on the outside, tender on the inside! Enjoy this delightful creation!
