Have you ever tried pasta made with ssamjang? If not, you’re missing out! The savory depth of ssamjang meets tender thinly sliced beef (um-samgyeop) to create an irresistible pasta dish that even foreigners will fall in love with!
Main Ingredients- 200g thinly sliced beef (um-samgyeop)
- 1 serving pasta (approx. 100g)
- 1 shiitake mushroom
- 3 cloves garlic
- 4 dried chili peppers (peperoncino)
- Pinch of salt (for boiling pasta)
Cooking Instructions
Step 1
Bring a pot of water to a rolling boil. Add a pinch of salt to season the water, then add your pasta. Cook for 1-2 minutes less than the package instructions, as it will be finished in the pan later (usually around 6 minutes is good for al dente). This prevents the pasta from becoming too soft.
Step 2
While the pasta is boiling, thinly slice the garlic cloves. Slice the shiitake mushroom into similar thin pieces. This slicing method helps release the mushroom’s aroma.
Step 3
Heat a large skillet over medium heat. Add the thinly sliced beef (um-samgyeop) and cook until it’s lightly browned and has rendered some of its fat. Then, add the sliced garlic, shiitake mushrooms, and dried chili peppers. Sauté until fragrant. The chili peppers will add a nice spicy kick – feel free to add more if you like it spicier!
Step 4
Once the beef is cooked to your liking, reduce the heat to low. Add 1 Tbsp of ssamjang and 1/2 Tbsp of oyster sauce. Stir well to combine with the ingredients, ensuring the ssamjang doesn’t burn. Pour in 1 cup of water (about 200ml) and stir to dissolve the sauce.
Step 5
Once the sauce begins to simmer gently, drain the cooked pasta and add it directly to the skillet. Toss the pasta with the sauce and continue to cook over medium-low heat for about 1-2 minutes, or until the sauce has thickened and coats the pasta beautifully. For an even smoother sauce, you can add 1-2 tablespoons of the reserved pasta water.
