  • 1 Tbsp Salt
  • 1/2 Tbsp Black Pepper
  • 2 Tbsp Cooking Wine (or Mirin/Sake)
  • 1/2 cup Potato Starch

Golden Soy Sauce Glaze
  • 8 Tbsp Soy Sauce
  • 4 Tbsp Water
  • 2 Tbsp Sugar
  • 2 Tbsp Corn Syrup (or Rice Syrup)
  • Pinch of Black Pepper
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Vinegar
  • 1 Tbsp Potato Starch

Cooking Instructions

Step 1

Make deep cuts into the chicken pieces. This helps the sauce penetrate better and ensures even cooking.

Step 2

Season the chicken with 1 Tbsp salt, 1/2 Tbsp black pepper, and 2 Tbsp cooking wine. Mix well and let it marinate for 30 minutes in the refrigerator. This step removes any gamey odors and tenderizes the meat.

Step 3

Place the marinated chicken in a zip-top bag. Add 1/2 cup of potato starch and shake the bag to coat the chicken evenly. Make sure there are no clumps of starch for a perfectly crispy coating.

Step 4

Heat your frying oil to about 170°C (340°F). Carefully add the starch-coated chicken pieces and fry until golden brown. For an extra crispy texture, fry the chicken once, let it rest for 3-5 minutes, and then fry it again. (The double-frying is key for that ultimate crispiness!)

Bring to a simmer over medium-low heat, stirring constantly. Cook until the sauce thickens slightly. Be careful not to burn it, especially once the potato starch is added.

Add the double-fried crispy chicken to the pan with the warm soy sauce glaze. Toss quickly to coat the chicken evenly. Serve immediately while hot for the best flavor and texture!
