Cooking Instructions
Step 1
Rinse the Seoritae beans thoroughly and soak them in cold water for at least 8 hours, or preferably overnight. This ensures they soften properly for cooking.

Place the soaked beans in a pot and add water at a 1:2 ratio (2 cups of beans to 4 cups of water). Add 1 tablespoon of salt to the water while cooking; this helps to remove any beany smell and enhances the flavor. Boil over medium heat for about 10 minutes, until the beans are tender.

Drain the cooked beans using a sieve. Then, pass them through a juicer (like a Hurom) to extract the soy milk. This method captures all the nutrients and flavor, resulting in a rich and deep broth.

If you don’t have a juicer, a blender works well too! Combine the cooked beans with some of the cooking water (or fresh cold water) in a blender and blend until smooth. Be careful not to over-blend; you want a creamy texture, not a paste. You can adjust the consistency by adding a little cold water or ice.

Now, let’s cook the noodles. Bring a large pot of water to a rolling boil. Prepare your somyeon noodles; a single serving is typically about the size of a 500-won coin. (So, 3 servings would be about 3 coin-sized portions).
