Sweet & Sour Seasoning

  • 4 Tbsp brewed soy sauce vinegar
  • 2-2.5 Tbsp sugar (adjust to taste)
  • 3-4 Tbsp red pepper flakes (adjust spiciness to preference)
  • 1 Tbsp sesame oil
  • 1/2 Tbsp minced garlic

First, wash the cucumbers thoroughly. Place chopsticks along one side of the cucumber and make diagonal cuts with your knife, as if slicing it at an angle. The chopsticks will prevent the knife from cutting all the way through, helping to keep the cucumber intact.

Next, flip the cucumber over and make cuts perpendicular to the first diagonal cuts. This creates a twisted, spiral pattern. When the cucumber is stretched, it will resemble a pretzel shape, offering a fun texture. Tip: Making the perpendicular cut at the end of the diagonal cut will create a prettier shape.

Sprinkle coarse salt evenly over the cut cucumbers and let them salt for at least 10 minutes. The salt will draw out excess moisture, ensuring a crisp texture, and will help the cucumbers absorb the seasoning later. After salting, rinse lightly under running water and gently squeeze out excess moisture.

Now, let’s make the delicious seasoning. In a bowl, combine 4 Tbsp of brewed soy sauce vinegar, 2-2.5 Tbsp of sugar, 3-4 Tbsp of red pepper flakes, 1 Tbsp of sesame oil, and 1/2 Tbsp of minced garlic. Mix everything well with a spoon to create the seasoning.
