Ingredients

  • 1 can (85g) tuna, drained moderately
  • 1 egg
  • 1/2 shiitake mushroom (approx. 40g)
  • 33g carrot
  • 30g onion
  • 1.5 Tbsp pancake mix (buchim garu)
  • 0.15 tsp salt (a pinch)
  • Cooking oil, as needed

Cooking Instructions

Step 1

Prepare the base ingredients for the tuna patties: 1 can (85g) of tuna, 1 egg, 1.5 Tbsp of pancake mix, and 0.15 tsp of salt. For the tuna, drain it just enough to remove excess oil; keeping it slightly moist will make the patties tender. Lightly beat the egg in a separate bowl.

Step 1

Step 2

Prepare the vegetables. Chop the shiitake mushroom, carrot, and onion into small, manageable pieces. You want them finely minced so they blend well into the patty mixture and are easy to eat, especially for children.

Step 2

Step 3

Finely mince the vegetables using a food chopper or by hand. Place the chopped shiitake mushroom, carrot, and onion into your food chopper and process until they are finely ground, suitable for mixing into the tuna patty. Aim for a consistency that will hold together well when cooked.

Step 3

Step 4

Place the drained tuna (remember, not completely dry!) into a mixing bowl. It’s important not to squeeze out all the oil, as this retained moisture will contribute to a softer, more flavorful patty.

Step 4

Step 5

Add the finely minced vegetables (shiitake mushroom, carrot, onion) to the bowl with the tuna. Crack the beaten egg into the bowl as well.

Step 5

Step 6

Add 1.5 Tbsp of pancake mix and 0.15 tsp of salt (about a pinch) to the mixture. Be cautious with the salt, as the tuna itself can be salty, and you’ll likely serve it with a dipping sauce. It’s better to start with less and adjust if needed.

Step 6

Step 7

Using a spoon or spatula, mix all the ingredients thoroughly until well combined. You want the mixture to form a cohesive mass, but avoid overmixing. Ensure all the vegetables and seasonings are evenly distributed.

Step 7

Step 8

Heat a frying pan over medium heat and add enough cooking oil to coat the bottom. Once the pan is warm, spoon portions of the tuna mixture onto the pan, shaping them into small, round patties. Using two spoons can help you form neat, round shapes.

Step 8

Step 9

Once the edges of the patties turn golden brown and are set, carefully flip them over using a spatula. Tuna patties can be delicate, so handle them gently to prevent breaking.

Step 9

Step 10

To ensure even cooking and a flat surface, gently press down on the center of each patty with your spatula or spoon after flipping. This prevents them from puffing up in the middle.

Step 10

Step 11

Continue to cook the patties until the second side is also golden brown and cooked through. Adjust the heat as needed to prevent burning while ensuring the inside is fully cooked.

Step 11

Step 12

Gently lift a patty to check for a beautiful golden-brown color on both sides. Once perfectly cooked, remove from the pan and enjoy your delicious tuna patties with your favorite dipping sauce, such as soy sauce or ketchup!
